Oatmeal Breakfast Bars

Wholesome and customizable oatmeal breakfast bars perfect for busy mornings or a sweet treat any time of day.

Ingredients

  • 2 cups rolled oats
  • 1 cup mashed bananas
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond butter or peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or dried fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Combine mashed bananas, honey (or maple syrup), almond butter (or peanut butter), and vanilla extract in a large bowl. Mix until blended.
  3. Whisk together rolled oats, cinnamon, and salt in another bowl, then fold into wet ingredients.
  4. Fold in chocolate chips or dried fruit if desired.
  5. Pour the mixture into the prepared baking pan and smooth the top. Bake for 25-30 minutes.
  6. Allow to cool for 10 minutes before lifting bars out of the pan and cooling completely on a wire rack. Cut into squares.

Notes

For chewier bars, avoid overbaking. Feel free to customize the mix-ins to your preference!
