Oatmeal Chocolate Chip Bars

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine 1 cup of rolled oats, 1 cup of all-purpose flour, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt in a large mixing bowl.
  3. Mix 1/2 cup of melted unsalted butter with 1/2 cup of brown sugar and 1/2 cup of granulated sugar until combined, then stir in 1/2 teaspoon of vanilla extract.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Spread the mixture into a prepared baking pan, pressing it down evenly.
  6. Bake for 20-25 minutes until the edges are golden brown and a toothpick comes out clean.
  7. Cool for at least 10 minutes before lifting the bars out and slicing them.

Notes

For added flavor, consider mixing in chopped nuts, dried fruit, or experimenting with spices.
