Oatmeal Fudge Bars

A delicious blend of satisfying oats and rich fudge, perfect for a cozy dessert.

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 teaspoons vanilla extract
  • 1 egg, room temperature
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 cup sweetened condensed milk
  • 1/2 cup semisweet chocolate chips
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon salt (for fudge layer)
  • 1 teaspoon vanilla extract (for fudge layer)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8 inch baking dish by lining it with parchment paper.
  3. Cream together the 1/2 cup butter, 1/2 cup granulated sugar, and 1/4 cup brown sugar until light and fluffy.
  4. Add in 2 teaspoons vanilla extract and 1 egg, beating until combined.
  5. Mix dry ingredients in a separate bowl: oats, flour, baking soda, baking powder, and salt.
  6. Combine dry and wet ingredients gradually, mixing until just combined.
  7. Spread the mixture into the prepared baking dish.
  8. Prepare the fudge layer by melting together sweetened condensed milk, chocolate chips, 1 tablespoon butter, and 1/4 teaspoon salt over low heat.
  9. Pour the fudge over the oat mixture, spreading evenly.
  10. Bake for 25–30 minutes or until the edges are golden and fudge is set.
  11. Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
  12. Cut into squares and serve.

Notes

These bars can be stored in an airtight container for up to a week and can also be frozen for up to 3 months.
