Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9-inch round cake pan by greasing it with butter or cooking spray and lining the bottom with parchment paper.
  3. Mix the dry ingredients in a medium bowl: whisk together flour, baking powder, and a pinch of salt.
  4. Cream the brown sugar and eggs together until light and fluffy—about 2-3 minutes.
  5. Add in the sour cream and blend until smooth and creamy.
  6. Incorporate the dry mixture into your batter gradually, mixing just until combined.
  7. Fold in the diced apples gently.
  8. Pour the batter into the prepared baking pan evenly.
  9. Add the streusel topping evenly over the batter.
  10. Bake for 30-35 minutes until the top is golden brown and a toothpick comes out clean.
