Pecan Banana Bread

A comforting Pecan Banana Bread that combines ripe bananas and crunchy pecans for a delicious treat.

  • 2 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 2 eggs
  • 1/2 cup chopped pecans
  • 1/2 cup brown sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5 inch loaf pan by greasing it with butter or cooking spray.
  3. Mash the ripe bananas in a large mixing bowl until smooth.
  4. Combine the eggs and brown sugar with the mashed bananas and mix until combined.
  5. Mix the flour, cinnamon, and salt in a separate bowl, then gradually add to the wet mixture.
  6. Fold in the chopped pecans gently into the batter.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes until golden brown and a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a cooling rack.

Notes

For extra flavor, add a splash of vanilla extract. Leftover banana bread freezes beautifully for later enjoyment.
