  • 1 large egg
  • 3/4 cup brown sugar
  • 1/2 cup butter, softened
  • 1 cup chocolate chips
  • 2 tsp pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare two large baking sheets with parchment paper.
  3. Mix the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and pumpkin puree, beating until well combined.
  5. Whisk together the flour, pumpkin pie spice, and a pinch of salt in a separate bowl.
  6. Combine the dry ingredients with the wet ingredients until just mixed.
  7. Scoop rounded dough onto the baking sheets, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes until edges are golden.
  9. Cool on baking sheets for 5 minutes before transferring to wire racks.

Notes

For a vegan option, you can use a flax egg instead of a regular egg.
