Pumpkin Cream Cheese Bread

  • 1 cup pumpkin puree
  • 2 large eggs
  • 4 oz cream cheese
  • 1/2 cup granulated sugar
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×5 inch loaf pan.
  3. Whisk together the flour, pumpkin pie spice, and baking soda in a medium mixing bowl.
  4. Beat the cream cheese and sugar until light and fluffy in a large mixing bowl.
  5. Add the eggs one at a time, mixing until fully incorporated, then fold in the pumpkin puree.
  6. Slowly add the dry ingredients into the wet mixture, folding gently until just combined.
  7. Transfer the batter into the prepared pan, smoothing the top.
  8. Bake for 60-70 minutes, checking for doneness with a toothpick.
  9. Cool the bread in the pan for 10 minutes, then transfer it to a wire rack.
  10. Slice and enjoy!
