Alfredo Bacon Potato Skillet

A hearty and creamy skillet dish combining tender potatoes, crispy bacon, and a delicious homemade Alfredo sauce.

  • 2 lbs Yukon Gold or red potatoes, diced
  • 6 slices thick-cut bacon, chopped
  • 4 tablespoons butter
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Prep your ingredients: Wash and dice the potatoes into bite-sized cubes.
  2. Cook the bacon: In a large skillet, heat olive oil and cook chopped bacon until crispy, about 5-7 minutes. Remove bacon, keeping the drippings.
  3. Sauté the potatoes: Add diced potatoes to the skillet and cook for 10-15 minutes until golden brown and tender.
  4. Add the garlic: Toss in minced garlic and sauté for another minute.
  5. Make the Alfredo sauce: In a separate saucepan, melt butter, whisk in heavy cream, and add Parmesan cheese until smooth. Season with salt and pepper.
  6. Combine it all: Pour the Alfredo sauce over potatoes, add the crispy bacon, and toss until coated.
  7. Finishing touches: Let it simmer for a minute, taste for seasoning, and adjust as needed.

Notes

For a lighter option, substitute bacon with sautéed mushrooms or turkey bacon. Leftovers can be reheated by adding a splash of milk or cream.
