BBQ Chicken Zucchini Nachos

A fun, healthy twist on classic nachos featuring crispy zucchini slices topped with BBQ chicken and cheese.

  • 2 medium Zucchini, sliced into 1/4-inch rounds
  • 2 cups BBQ Chicken, shredded
  • 1 cup Cheese (sharp cheddar and mozzarella blend)
  • Chopped green onions (optional)
  • Sliced jalapeños (optional)
  • Shredded lettuce (optional)
  • Diced tomatoes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the zucchinis into rounds about 1/4-inch thick.
  3. Arrange the zucchini rounds flat on a baking sheet lined with parchment paper.
  4. Bake the zucchini for about 15-20 minutes until slightly golden and tender.
  5. Prepare the BBQ chicken by shredding cooked chicken and coating it in BBQ sauce.
  6. Layer the nachos by sprinkling BBQ chicken over the zucchini, followed by cheese.
  7. Bake again for 10-12 minutes until the cheese is melted and bubbly.
  8. Add fresh toppings and serve hot.

Notes

For a vegetarian option, substitute chicken with pulled jackfruit. Enjoy with additional toppings like sour cream or guacamole.
