Chili Mac Cornbread Pie

A comforting dish that combines chili and mac and cheese, all nestled in a golden cornbread crust.

Ingredients

  • Chili (homemade or canned)
  • Elbow macaroni
  • Cornbread mix (store-bought or homemade)
  • Sharp cheddar cheese
  • Monterey Jack cheese
  • Sour cream (for topping)
  • Sliced jalapeños (for topping)
  • Fresh cilantro (for topping)
  • Green onions (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. Heat your chili over medium heat in the same pot.
  4. Add the cooked macaroni to the chili and stir until well coated.
  5. Prepare your cornbread mix according to package directions or make it from scratch.
  6. Pour the chili mac mixture into a greased baking dish.
  7. Pour the cornbread batter over the top.
  8. Sprinkle the cheese over the cornbread layer.
  9. Bake for 25-30 minutes until golden brown.
  10. Cool for a few minutes before serving.
