Cowboy Butter Udon

A fusion of comforting udon noodles and rich cowboy butter, topped with seared steak for a hearty meal.

  • 8 ounces Udon noodles
  • 1 pound Flank steak (or Sirloin)
  • 4 tablespoons unsalted Butter
  • 4 cloves Garlic, minced
  • 2 tablespoons Fresh herbs (parsley and chives)
  • 2 tablespoons Lemon juice
  • 1/2 teaspoon Crushed red pepper flakes (optional)

Instructions

  1. Cook the Udon Noodles: Begin by bringing a large pot of salted water to a boil. Add the udon noodles and cook according to package instructions, usually about 8-10 minutes until tender but still chewy. Reserve a cup of pasta water before draining.
  2. Sear the Steak: Season the flank steak with salt and pepper. Heat a skillet over medium-high heat, add oil, and sear the steak for about 4-5 minutes on each side for medium-rare. Let it rest before slicing against the grain.
  3. Make Cowboy Butter: In the same pan, reduce heat and add butter. Once melted, add minced garlic and red pepper flakes. Cook for about 1 minute then stir in fresh herbs and lemon juice.
  4. Combine the Noodles and Butter: Drain cooked udon and add to the skillet. Toss with tongs, adding reserved pasta water as needed until the desired consistency is achieved.
  5. Slice the Steak: Thinly slice the rested steak against the grain for tenderness.
  6. Serve It Up: Plate the noodles, top with sliced steak, garnish with herbs and lemon zest, and drizzle with extra cowboy butter.
