Fajita Mac and Cheese

A comforting dish that blends creamy mac and cheese with seasoned fajita chicken and colorful bell peppers.

  • 2 cups elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 pound chicken breast, cooked and sliced
  • 1 bell pepper, sliced (any color)
  • 1 onion, sliced
  • 1 tablespoon fajita seasoning
  • Salt and pepper, to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package instructions, about 7-8 minutes. Drain and set aside.
  2. Sauté the Vegetables: In the same pot, melt the butter over medium heat. Add onions and bell peppers, cooking until tender and slightly caramelized, about 5 minutes.
  3. Make the Cheese Sauce: Sprinkle in the flour and whisk with the veggies for 1-2 minutes until golden. Gradually pour in the milk, whisking constantly.
  4. Add the Cheese: Remove from heat and stir in the cheddar cheese until melted and creamy.
  5. Mix in the Chicken and Seasoning: Stir in cooked chicken, fajita seasoning, salt, and pepper.
  6. Combine Pasta & Sauce: Add the drained macaroni to the cheese sauce and stir until coated.
  7. Final Touches: Optionally, transfer to a greased baking dish, sprinkle extra cheese, and bake at 350°F for 15 minutes until bubbly.
