French Dip Rice Bake

A cozy baked dish that combines tender roast beef, gooey Swiss cheese, and savory onions over a hearty rice base.

  • 1 cup long-grain white or brown rice
  • 2 cups water
  • 1 large sweet onion, sliced
  • 2 cups sliced roast beef
  • 2 cups shredded Swiss cheese
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the rice in boiling water with a pinch of salt, covering and letting it simmer until fluffy.
  3. Sauté the sliced onion in olive oil until translucent.
  4. Combine the cooked rice, sautéed onions, roast beef, salt, pepper, and Swiss cheese in a large bowl.
  5. Transfer the mixture to a greased 9×13-inch baking dish.
  6. Top with additional Swiss cheese.
  7. Bake covered with aluminum foil for 25 minutes, then uncover and bake for another 15 minutes until golden.

Notes

Feel free to swap roast beef with veggies for a vegetarian option or experiment with different types of cheese.
