Loaded Cheeseburger Zucchini Skillet

A hearty and healthy twist on the classic cheeseburger, featuring zucchini and savory flavors in a one-pan skillet.

  • 1 lb Ground Beef
  • 2 medium Zucchini, sliced
  • 1 cup Cheddar Cheese, shredded
  • 1/2 cup Pickles, chopped
  • 1 small Onion, diced
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • Salt & Pepper, to taste
  • 1 teaspoon Dried Oregano
  • Mustard, for serving

Instructions

  1. Prep the zucchini by washing and slicing into bite-sized pieces.
  2. Heat a large skillet over medium-high heat and add the olive oil.
  3. Add the diced onion and minced garlic; sauté for 2-3 minutes.
  4. Incorporate the ground beef; break it apart and season with salt, pepper, and oregano. Cook for 6-8 minutes.
  5. Add the zucchini to the skillet and cook for 5-7 minutes until tender.
  6. Sprinkle the shredded cheese over the skillet and cover for 2-3 minutes to melt.
  7. Fold in the pickles and mix well.
  8. Serve with a dollop of mustard on top.

Notes

For extra kick, add chopped jalapeños. You can also switch out the cheese for mozzarella or plant-based alternatives.
