A whimsical brunch dish that combines fluffy pancakes with savory sausage, scrambled eggs, and cheesy goodness baked to perfection.

Ingredients

  • Pancakes (homemade or store-bought)
  • Breakfast sausage (ground pork, turkey, or plant-based)
  • Eggs
  • Shredded cheddar cheese (or Monterey Jack/pepper jack)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare pancake batter and cook pancakes until golden.
  2. Cook the sausage in the same skillet until browned and fully cooked, breaking it apart as needed.
  3. Whisk the eggs, then scramble them in a non-stick skillet until fluffy; season with salt and pepper.
  4. Layer in a greased baking dish: pancake, sausage, scrambled eggs, and cheese. Repeat until ingredients are used, finishing with pancakes and cheese.
  5. Bake for 20-25 minutes until cheese is bubbly and golden.
  6. Serve warm, optionally drizzling with maple syrup or salsa.
