Hearty Pastrami Swiss Potato Skillet

A flavor-packed, comforting dish featuring crispy potatoes, pastrami, and melted Swiss cheese, perfect for brunch or dinner.

  • 1 lb Pastrami
  • 2 cups Yukon Gold Potatoes
  • 1 cup Swiss Cheese, shredded
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Paprika

Instructions

  1. Start by washing and peeling your potatoes (if desired). Dice them into roughly 1-inch cubes for even cooking. Soak the cut potatoes in water for about 10-15 minutes.
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and stir until fragrant, around 30 seconds.
  3. Add the diced potatoes to the skillet, season with salt, pepper, and paprika. Sauté undisturbed for about 5 minutes. Stir occasionally for another 10-15 minutes until tender and golden brown.
  4. Mix in the pastrami slices and let them fry for a couple of minutes.
  5. Sprinkle shredded Swiss cheese over the mixture, cover with a lid, and reduce heat to low to melt the cheese, about 3-5 minutes.
  6. Serve warm, garnished with parsley or chives, and enjoy!
