Queso Taco Rice Bake

A hearty and satisfying casserole combining all your favorite taco ingredients into a cozy bake that brings warmth and joy to your dinner table.

  • 2 cups Cooked Rice
  • 1 pound Ground Beef or Turkey
  • 1 packet Taco Seasoning
  • 2 cups Queso Blanco or Queso Dip
  • 1 cup Sour Cream
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Chopped Tomatoes
  • ¼ cup Green Onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook your rice according to the package instructions.
  3. Brown the ground beef or turkey in a large skillet over medium heat for 5–7 minutes.
  4. Sprinkle in your taco seasoning and mix well; let it simmer for about 2 minutes.
  5. Combine the cooked rice, meat mixture, and chopped tomatoes in a large bowl; gently fold in the queso.
  6. Transfer the mixture to a greased 9×13-inch casserole dish.
  7. Spread the sour cream over the mixture and sprinkle with shredded cheddar cheese and green onions.
  8. Bake for 25–30 minutes until the cheese is bubbly and golden brown.
  9. Garnish with extra green onions or fresh cilantro before serving.

Notes

This dish can be prepared ahead of time and stored in the refrigerator or frozen for later enjoyment.
