Southern Smothered Pork Chop Rice

A comforting Southern dish featuring tender pork chops smothered in rich gravy, served over fluffy rice.

Ingredients

  • Pork Chops (Bone-in or boneless)
  • Rice (Long-grain white or brown)
  • Gravy (Homemade or store-bought)
  • Onion (Sweet or yellow)
  • Garlic (Fresh or garlic powder)
  • Seasonings (Salt, pepper, paprika)
  • Cooking Oil (Vegetable or canola)
  • Butter (or vegan alternative)

Instructions

  1. Prepare the pork chops by seasoning them with salt, pepper, and paprika. Let rest for 30 minutes to 1 hour.
  2. Sear the chops in a heated skillet with oil for 4-5 minutes on each side until golden brown.
  3. Remove the chops and set aside, letting them rest.
  4. Make the gravy by sautéing onions in the same skillet, then adding garlic and butter, followed by flour to create a roux.
  5. Add broth gradually and simmer until the gravy thickens, about 5-7 minutes.
  6. Return the chops to the skillet, letting them simmer in the gravy for 15-20 minutes.
  7. Cook the rice by rinsing it, then boiling in water for 18-20 minutes until fluffy.
  8. Serve the rice topped with a pork chop and drizzle the gravy over it, garnishing with parsley if desired.

Notes

For a vegan version, substitute pork chops with seitan or portobello mushrooms and use vegetable broth.
