Street Corn Alfredo Ravioli

A comforting fusion of classic street corn flavors and creamy Alfredo ravioli, perfect for any gathering.

Ingredients

  • Ravioli (fresh or frozen)
  • Corn (fresh or frozen)
  • 4 tablespoons of butter
  • 1 cup of heavy cream
  • 1 cup of grated Parmesan cheese
  • Garlic powder, to taste
  • Salt, to taste
  • Pepper, to taste
  • Cotija cheese, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. Begin by boiling a large pot of salted water. Once bubbling, add the ravioli and cook for about 3-4 minutes for fresh, or 5-6 for frozen.
  2. Add a drizzle of olive oil to the water to prevent sticking.
  3. In a skillet over medium-high heat, add olive oil and sauté the corn for about 5-7 minutes until caramelized.
  4. In another saucepan, melt butter over medium heat and whisk in heavy cream. Simmer for a couple of minutes.
  5. Stir in Parmesan cheese and seasonings until combined.
  6. Gently fold the cooked ravioli into the Alfredo sauce with the sautéed corn.
  7. Plate the ravioli and garnish with Cotija cheese and cilantro.

Notes

Add a splash of lemon juice to the Alfredo for extra brightness. Serve with a salad or crusty bread.
