Zucchini Apple Crisp Bake

A delightful dessert that combines the freshness of zucchini with the sweetness of apples, topped with a crispy crumble.

Ingredients

  • 2 cups of shredded zucchini
  • 2 cups of peeled and sliced apples
  • 1 cup of rolled oats
  • ½ cup of brown sugar
  • ½ cup of all-purpose flour
  • ½ teaspoon of cinnamon
  • ⅓ cup of cold butter
  • 1 teaspoon of vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prep the Zucchini: Grate 2 cups of zucchini and squeeze out excess moisture.
  3. Slice the Apples: Peel and slice your apples into thin pieces and toss with cinnamon.
  4. Mix the Filling: Combine zucchini, apples, and half of the brown sugar.
  5. Prepare the Crumble Topping: Combine oats, flour, remaining brown sugar, and cinnamon, then cut in cold butter.
  6. Layer the Dish: Grease an 8×8 inch baking dish and spread the zucchini-apple mixture evenly, then crumble the topping over it.
  7. Bake for about 35-40 minutes until golden brown and bubbly.
  8. Cool for about 10 minutes before serving.

Notes

Serve warm with vanilla ice cream or a dollop of whipped cream.
