Zucchini Buffalo Mac Bake

A creamy and cheesy twist on classic mac and cheese with a spicy buffalo kick and added zucchini for extra flavor and texture.

  • 2 cups Macaroni Pasta
  • 2 cups Shredded Cheese (sharp cheddar and mozzarella)
  • ½ cup Buffalo Sauce
  • 2 medium Zucchini
  • 1 cup Milk
  • 2 tablespoons Butter
  • 1 cup Breadcrumbs
  • 1 teaspoon Garlic Powder
  • Salt and Pepper (to taste)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the macaroni pasta according to package instructions, about 7-8 minutes. Drain and set aside.
  3. Sauté the zucchini in butter over medium heat for 5-7 minutes until tender.
  4. Make the cheese sauce by melting the cheese with milk over medium heat and adding garlic powder.
  5. Combine the cooked pasta, sautéed zucchini, cheese sauce, and buffalo sauce in a mixing bowl.
  6. Transfer the mixture into a greased baking dish.
  7. Add remaining cheese and breadcrumbs on top.
  8. Bake for 25-30 minutes until golden and bubbly.
  9. Cool for 5-10 minutes before serving.

Notes

Feel free to add protein or use different vegetables. Great for make-ahead meals!
