  • 2 medium zucchinis (sliced into half-moons)
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Prep your ingredients: Start by peeling and deveining the shrimp if not done already. Slice your zucchinis into half-moons and mince your garlic.
  2. Heat the skillet: In a large skillet, heat the olive oil over medium heat for about a minute.
  3. Sauté the zucchini: Toss the sliced zucchini into the hot skillet and sauté for about 3-4 minutes until tender.
  4. Add garlic: Add the minced garlic and cook for another minute.
  5. Season the shrimp: While the zucchini is cooking, season the shrimp with Cajun seasoning, salt, and pepper.
  6. Cook the shrimp: Push the zucchini to the side and add the seasoned shrimp, cooking for about 2-3 minutes on each side.
  7. Combine and finish: Once the shrimp are cooked, combine everything in the skillet and cook for another minute.
  8. Garnish and serve: Remove from heat and sprinkle fresh parsley on top.
