Zucchini Chicken Parmesan Boats

A delightful and healthy comfort food dish featuring zucchini stuffed with juicy chicken, marinara sauce, and melty cheese.

Ingredients

  • 2 large Zucchini
  • 1 pound Chicken Breast
  • 1 cup Marinara Sauce
  • 1 cup Mozzarella Cheese
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic
  • 1 teaspoon Italian Seasoning
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice each zucchini in half lengthwise and scoop out seeds.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Heat olive oil in a skillet, add minced garlic and sauté for about a minute.
  5. Add the chicken breasts, season, and cook for about 5-7 minutes on each side.
  6. Chop the cooked chicken, then combine with marinara sauce and mozzarella cheese.
  7. Stuff the zucchini halves with the chicken mixture and top with additional marinara and cheese.
  8. Bake for about 25-30 minutes until zucchini is tender and cheese is bubbling.
  9. Serve warm and enjoy!

Notes

Can be prepared ahead of time and stored separately in the fridge. Add fresh herbs for garnish if desired.
