Pizza Eggs

A delightful fusion of pizza flavors and fluffy eggs, perfect for breakfast or any meal of the day.

  • 3 Eggs
  • 60g (approx. 2 oz) Reduced-fat Cheese, grated
  • 1 tbsp Passata (about 15g)
  • A few slices of Salami (approx. 20g)
  • Mixed Herbs, to top

Instructions

  1. Prep your ingredients: Gather all your ingredients, pre-grate your cheese and slice your salami.
  2. Semi-Whisk the eggs: Crack the eggs in a mixing bowl and whisk until fully combined. Add a pinch of salt and pepper.
  3. Heat up the pan: Place a non-stick skillet over medium heat and add cooking spray or olive oil.
  4. Cook the eggs: Pour the whisked eggs into the pan and gently stir. Cook until slightly runny, about 2-3 minutes.
  5. Add the sauce: Once eggs are almost cooked, pour in the passata and fold the eggs over the sauce.
  6. Sprinkle cheese and salami: Add cheese and salami on top, reduce heat, and cover for another 1-2 minutes until cheese melts.
  7. Finish with herbs: Remove from heat, sprinkle mixed herbs, and mix gently.
  8. Plate up: Scoop into a bowl or plate and serve with garnishes.

Serve with crusty bread, crispy toast, or a side salad for a balanced dish.
