Potato Flatbread

A warm and pillowy potato flatbread that’s perfect as a side or a base for various toppings.

Ingredients

  • 2 medium-sized potatoes
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • Water (as needed)

Instructions

  1. Cook the potatoes by peeling and cubing them, then boiling in salted water until fork-tender (about 15-20 minutes). Drain and let cool slightly.
  2. Mash the potatoes in a large mixing bowl until smooth. Avoid lumps for a creamy texture.
  3. Add the flour, salt, and olive oil to the mashed potatoes and mix until fully combined. If crumbly, add water a tablespoon at a time until dough forms.
  4. Knead the dough on a floured surface for 3-5 minutes until smooth. Adjust flour as necessary to manage stickiness.
  5. Divide the dough into 6-8 equal portions, shaping each into a ball and flattening to about 1/4 inch thick.
  6. Cook the flatbreads in a preheated skillet over medium-high heat for 2-3 minutes per side until golden spots appear.
  7. Keep the cooked flatbreads warm under a kitchen towel while cooking the remaining ones, optionally brushing with melted butter.

Notes

Flatbreads are great with dips and can be customized with herbs or spices. Freeze leftovers for up to three months.
