Protein Sakura Berry Cheesecake

A delightful Japanese-inspired cheesecake that combines fruity freshness and creamy goodness while providing a protein boost.

  • 2 cups Greek yogurt or skyr
  • 1 cup protein powder
  • 1 cup light cream cheese
  • 1/2 cup natural sweetener
  • 2 tablespoons sakura (cherry blossom) extract
  • Fresh berries for topping (strawberries, raspberries, or cherries)

Instructions

  1. Prepare the crust (optional): Mix 1 cup of crushed graham crackers or digestive biscuits with 4 tablespoons of melted butter and press into a springform pan. Refrigerate for 30 minutes.
  2. Mix the ingredients: Combine the Greek yogurt, protein powder, light cream cheese, sakura extract, and natural sweetener in a bowl. Blend until smooth.
  3. Taste test your mixture and adjust sweetness or sakura flavor as needed.
  4. Pour the filling into the springform pan over the crust, or directly into a greased pan if skipping the crust.
  5. Chill the cheesecake in the fridge for at least 4 hours, preferably overnight.
  6. Decorate with berries before serving.
  7. Slice and enjoy with fresh mint and berry sauce if desired.

Notes

You can make this cheesecake in advance and it keeps well in the fridge for up to 3-4 days.
