Protein Sesame Mochi Cheesecake

A delightful fusion dessert combining the chewyness of mochi with the creaminess of cheesecake, enhanced with protein for a guilt-free treat.

  • 1 cup glutinous rice flour
  • 150 grams natural sweetener (honey or maple syrup)
  • 1 cup water
  • 1 cup Greek yogurt or Skyr
  • 1/2 cup light cream cheese
  • 1 scoop protein powder
  • 2 tablespoons sesame paste (tahini)
  • 1 teaspoon vanilla extract
  • Optional: 1 tablespoon matcha powder

Instructions

  1. Combine the glutinous rice flour, natural sweetener, and water in a mixing bowl until smooth.
  2. Steam the mixture for 30-45 minutes until translucent.
  3. Let it cool for 10 minutes and then spread in a parchment-lined 9-inch springform pan.
  4. Blend together Greek yogurt, light cream cheese, protein powder, sesame paste, and vanilla extract until smooth.
  5. Taste the filling and adjust sweetness if necessary.
  6. Pour the filling over the mochi layer and smooth it out.
  7. Chill the cheesecake for at least 2 hours in the freezer or overnight in the fridge.
  8. Unmold and slice the cheesecake into wedges before serving.

Notes

For added flavor, serve with fresh fruit or a dollop of whipped cream. You can also sprinkle sesame seeds on top.
