Pumpkin Cheesecake Bars

A perfect combination of creamy, spicy, and sweet with a delightful graham cracker crust, these Pumpkin Cheesecake Bars are a comforting autumn dessert.

  • 2 packages cream cheese (8 oz each)
  • 1 cup pumpkin puree
  • 2 eggs
  • 1/2 cup sugar
  • 1.5 cups crushed graham crackers
  • 1/2 cup melted butter
  • 1 tsp pumpkin pie spice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the graham cracker crust by combining crushed graham crackers with melted butter.
  3. Press the crust into a greased 9×9-inch baking dish.
  4. Bake the crust for about 10 minutes until golden.
  5. Blend the cream cheese until smooth, then add pumpkin puree, sugar, eggs, and pumpkin pie spice.
  6. Pour the filling over the crust and spread evenly.
  7. Bake for 30–35 minutes until the edges are firm.
  8. Cool at room temperature for an hour, then chill in the fridge for at least 2 hours.
  9. Slice and serve with toppings like whipped cream and cinnamon.

Notes

These bars can be frozen for up to 3 months; wrap tightly to prevent freezer burn.
