Quick & Easy Homemade Butter Chicken

  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter, divided
  • 6 garlic cloves, minced
  • 1 medium onion, diced
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)

Instructions

  1. Marinate the chicken: In a mixing bowl, combine the chicken thighs with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Mix well until the chicken is coated nicely. Let it marinate for at least 15 minutes.
  2. Sauté the aromatics: In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add 2 tablespoons of butter. Add minced garlic and diced onion. Sauté for about 5 minutes until the onions turn translucent.
  3. Cook the chicken: Add the marinated chicken to the skillet. Cook for 7-10 minutes, stirring occasionally until browned and cooked through.
  4. Add the tomato sauce: Pour in the tomato sauce, sugar, and adjust salt to taste. Stir to combine and let it simmer for about 5 minutes.
  5. Finish with cream: Lower the heat and stir in the heavy cream, cayenne pepper, and garam masala. Let it simmer for another 5-10 minutes for a creamy texture.
  6. Serve it up: Transfer to a serving bowl, garnish with parsley, and serve hot with naan and rice.
