Rose Shrimp Pasta

A comforting and flavorful dish featuring succulent shrimp in a creamy pink sauce, perfect for family gatherings or a cozy night in.

  • Pasta of your choice
  • 2 cups tomato sauce
  • 1 tbsp tomato paste
  • 2 tbsp chopped onion
  • 1 tbsp minced garlic
  • 2 tbsp butter
  • Salt and pepper to taste
  • ½ cup heavy cream
  • ½ tsp Italian seasoning
  • ½ tsp oregano
  • ½ tsp red pepper flakes
  • Shredded parmesan
  • Parsley/Cilantro (for garnishing)

Instructions

  1. Boil the Pasta – Start by bringing a large pot of salted water to a boil. Add in your pasta of choice. Cook according to the packaged instructions until al dente. Don’t forget to reserve about a cup of pasta water before draining.
  2. Sauté the Aromatics – In a large skillet over medium heat, melt the butter. Toss in the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional minute.
  3. Add Tomato Products – Stir in the tomato sauce and tomato paste. Let this simmer for about 5 minutes until the sauce thickens.
  4. Creamy Transformation – Lower the heat, slowly pour in the heavy cream while stirring, then sprinkle in the Italian seasoning, oregano, salt, pepper, and red pepper flakes. Taste and adjust seasonings.
  5. Add Shrimp – If using raw shrimp, add them now and cook for 3-4 minutes until pink and opaque. If using cooked shrimp, warm them through in the sauce.
  6. Combine with Pasta – Drain the pasta and add it to the skillet with the sauce. Toss together, adding reserved pasta water as needed to coat everything.
  7. Plate and Garnish – Serve hot, garnishing with freshly shredded parmesan and parsley or cilantro. Squeeze lemon juice on top for brightness.

Notes

For a lighter version, substitute heavy cream with half-and-half or non-dairy cream. Adjust spice to preference by modifying red pepper flakes.
