Easy and Cozy Rotisserie Chicken Broccoli Pasta

A comforting pasta dish with rotisserie chicken, broccoli, and a creamy sauce, perfect for busy weeknights or cozy weekends.

  • 2 cups rotisserie chicken, shredded
  • 8 oz pasta (penne or fusilli)
  • 2 cups broccoli florets
  • 1 cup cream (heavy or half-and-half)
  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta by bringing a large pot of salted water to a boil. Add your pasta and cook until al dente according to package instructions, about 8-10 minutes.
  2. Prep the Broccoli by chopping it into bite-sized florets and blanching them in the boiling water for the last 2-3 minutes of pasta cooking.
  3. Sauté the Garlic in a large skillet with olive oil over medium heat for about 1 minute until fragrant.
  4. Add the Chicken, mixing it with the garlic for 2-3 minutes until heated through.
  5. Create the Cream Sauce by reducing the heat, adding cream, and gradually mixing in parmesan cheese, allowing it to melt and thicken.
  6. Combine Everything by adding the pasta and broccoli to the skillet, stirring to coat.
  7. Serve and Enjoy with a sprinkle of parmesan and crushed red pepper flakes.

Notes

Feel free to modify the vegetables and add spices to suit your taste. This dish can be made ahead and is great for leftovers.
