Instructions

  1. Preheat your oven: Set your oven to 350°F (175°C).
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, pumpkin pie spice, and a pinch of salt.
  3. Cream the butter and sugar: In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Add the egg and pumpkin puree: Beat in the egg and pumpkin puree until well combined.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the pumpkin mixture, mixing until just combined.
  6. Scoop the dough: Drop dollops of batter onto a parchment-lined baking sheet, spacing them about 2 inches apart.
