Watermelon + Cucumber + Feta Salad

A light and refreshing summer salad combining juicy watermelon, crisp cucumber, creamy feta, and fresh mint.

Ingredients

  • 6 cups watermelon (seeded and cubed)
  • 1 English cucumber (chopped)
  • 6 oz feta cheese (cubed)
  • Handful of chopped fresh mint leaves
  • 1 fresh lime (zest and juice)
  • Sea salt flakes and fresh ground black pepper (to taste)

Instructions

  1. Prep your ingredients by chopping watermelon into cubes and placing it in a large mixing bowl.
  2. Chop the cucumber into bite-sized pieces and toss it into the bowl with the watermelon.
  3. Add the cubed feta cheese over the watermelon and cucumber.
  4. Zest the lime and juice it into the salad.
  5. Chop a handful of fresh mint leaves and sprinkle them over the salad.
  6. Season the salad with sea salt and freshly ground black pepper.
  7. Chill the salad in the fridge for about 15 minutes before serving (optional).

Notes

For a vegan version, swap feta for a plant-based alternative or omit cheese entirely.
