  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup fresh parsley (chopped, plus more for garnish)
  • 2 lbs baby Yukon Gold potatoes (halved)
  • 1/2 cup low-sodium beef broth
  • 1 medium onion (sliced, optional)
  • 1 cup carrots (chopped, optional)

Instructions

  1. Prep the Beef: Cut your beef chuck roast into large chunks—about 2-3 inches.
  2. Season Generously: Sprinkle salt and black pepper all over the beef.
  3. Sear the Beef (Optional): Heat olive oil in a large skillet, add beef chunks, and sear for 3-4 minutes on each side.
  4. Melt the Butter and Sauté the Garlic: Mix melted butter and minced garlic, then pour over the beef in the slow cooker.
  5. Add Herbs, Red Pepper Flakes, and Parsley: Sprinkle the herbs, red pepper flakes, and parsley over the beef.
  6. Prepare the Vegetables: Slice the onion and chop the carrots if using, then scatter around the beef with the halved potatoes.
  7. Pour in the Broth: Gently pour the beef broth over everything.
  8. Cover and Cook: Set your slow cooker to low for 8 hours or high for 4-5 hours.
  9. Finishing Touches: Once done, check that the beef is tender and the potatoes are fork-tender. Taste for seasoning before serving.
