Slow Cooker Garlic Butter Beef with Potatoes

A cozy and hearty dish combining tender beef, savory garlic butter, and perfectly cooked potatoes, ideal for family dinners.

  • 2.5 lbs beef chuck roast, cut into large chunks
  • Salt and black pepper, to taste
  • 2 tbsp olive oil (for searing, optional)
  • 6 tbsp unsalted butter, melted
  • 5 cloves garlic, minced
  • 1 tsp dried Italian herbs (or mix of thyme, oregano, basil)
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped (plus more for garnish)
  • 2 lbs baby Yukon Gold potatoes, halved
  • 1/2 cup low-sodium beef broth
  • 1 medium onion, sliced (optional)
  • 1 cup carrots, chopped (optional)

Instructions

  1. Heat a large skillet over medium-high heat and add the olive oil.
  2. Season your beef chunks generously with salt and black pepper.
  3. Sear the beef in the skillet, turning for about 3-4 minutes.
  4. Minced garlic — this should smell amazing!
  5. Chop your parsley and other veggies (if using).
  6. Halve the potatoes and chop the carrots into evenly sized pieces.
  7. Transfer the seared beef to your slow cooker.
  8. Pour the melted butter over the beef and add minced garlic and dried herbs, followed by the broth.
  9. Add your potatoes and carrots (if you’re using them) and toss everything well.
  10. Cover your slow cooker and set it to low for 480 minutes or high for 240 minutes.
  11. When time is up, gently stir everything in the slow cooker.
  12. Use a slotted spoon to serve portions onto plates.

Notes

Feel free to substitute chuck roast with brisket or round roast. You can also add more fresh herbs for extra flavor.
