Southwest Chicken Totchos

A comforting dish featuring crispy tater tots smothered in shredded chicken, corn, and a variety of toppings.

Ingredients

  • Frozen Tater Tots
  • Cooked Chicken, shredded or diced
  • Corn (canned or frozen)
  • Cheddar Cheese, shredded
  • Red Onion, diced
  • Jalapeños, sliced
  • Sour Cream
  • Fresh Cilantro, chopped
  • Lime Wedges

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Spread the frozen tater tots in a single layer on a baking sheet lined with parchment paper. Bake according to the package instructions (usually about 20-25 minutes), flipping halfway through.
  3. While the tots are baking, heat up your cooked chicken in a skillet with a splash of taco seasoning or spices until heated through, about 5-7 minutes.
  4. If desired, add a splash of chicken broth or salsa for extra flavor and let it thicken.
  5. Once the tater tots are golden, sprinkle the seasoned chicken on top, followed by the corn and cheddar cheese.
  6. Return to the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.
  7. Remove from the oven and top with red onion, jalapeños, cilantro, sour cream, and lime juice.
  8. Serve immediately and enjoy your creation!
