Spicy Salmon Sushi Bake

A comforting twist on sushi, this Spicy Salmon Sushi Bake brings all the delicious flavors of sushi into a hearty dish, perfect for sharing.

  • 2 cups sushi rice (uncooked)
  • 2.5 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 lb fresh salmon fillet (skinless and diced)
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha sauce (or to taste)
  • 1 teaspoon sesame oil
  • 1/2 cup green onions (chopped, plus extra for garnish)
  • 1 sheet nori (cut into small strips)
  • Tobiko (optional for garnish)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Cook the rice in a saucepan with water, bring to a boil, then simmer for 18-20 minutes.
  3. Season the cooked rice with a mixture of rice vinegar, sugar, and salt.
  4. Prepare the salmon mixture by combining diced salmon, mayo, Sriracha, sesame oil, and green onions.
  5. Assemble the bake by layering half of the sushi rice, followed by the salmon mixture, and topping with remaining rice.
  6. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes.
  7. Garnish with green onions, nori strips, and optional tobiko before serving.

Notes

For a crispy top, broil for an additional 1-2 minutes. Can be made ahead of time for convenience.
