Delicious Strawberry and Yogurt Mousse

A light and refreshing strawberry and yogurt mousse that strikes the perfect balance of sweetness and tartness, ideal for any occasion.

  • 250 grams Fresh Strawberries
  • ½ liter Natural Yogurt (unsweetened)
  • ½ liter Whipping Cream
  • 80 grams Sugar
  • 12 grams Gelatin (powdered, hydrated in ¼ cup cold water)
  • 1 tablespoon Sugar (for whipped cream)
  • 4 large Strawberries (for decoration)

Instructions

  1. Prep your strawberries: Wash the strawberries thoroughly under cold water and remove the stems. Slice enough of them to blend into a puree, and set aside some whole ones for decoration.
  2. Make strawberry purée: In a blender or food processor, blend the sliced strawberries until smooth. Pour the puree into a bowl and let it cool.
  3. Hydrate the gelatin: Sprinkle the gelatin over the ¼ cup cold water in a small bowl. Let it sit for about 5-10 minutes until it blooms.
  4. Heat the gelatin: After blooming, gently heat the gelatin in the microwave or over a double boiler until dissolved but not boiling. Allow it to cool slightly.
  5. Whip the cream: In a large bowl, pour in the whipping cream and add the tablespoon of sugar. Using an electric mixer, whip until soft peaks form.
  6. Mix yogurt and strawberry purée: In another bowl, combine the yogurt, strawberry purée, and dissolved gelatin. Stir gently until evenly blended.
  7. Fold in the whipped cream: Gently fold the whipped cream into the yogurt-strawberry mixture until fully combined.
  8. Transfer and chill: Spoon the mousse mixture into serving dishes or glasses. Cover with plastic wrap and place in the refrigerator for at least 120-180 minutes until set.

Notes

For a beautiful presentation, garnish with fresh strawberries and a sprig of mint.
