A hearty salad inspired by Jersey Mike’s, combining all the classic sub ingredients minus the bread for a lighter, refreshing meal.

  • 1 small tomato or 1012 cherry tomatoes
  • ½ medium sweet yellow or red onion
  • ¼ cup sliced pepperoncini or banana peppers
  • 4 slices (3 oz) provolone cheese
  • 4 slices (3 oz) deli ham
  • 4 slices (3 oz) deli turkey
  • 4 slices (2 oz) deli sliced salami
  • Optional: 1-2 small soft Italian rolls (like a bolillo roll)
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper

Instructions

  1. Prep the Lettuce: Start by washing your iceberg lettuce (or romaine) to remove any dirt or grit. Pat it dry and chop into bite-sized pieces.
  2. Chop Those Tomatoes: Grab your tomatoes and chop them up! Toss them in with the lettuce.
  3. Onion Action: Slice your onion into thin pieces and add this to the bowl.
  4. Pepper Time: Add your sliced pepperoncini or banana peppers next.
  5. Meat & Cheese Assembly: Chop your provolone, ham, turkey, and salami into small pieces and mix them into the salad.
  6. Dress It Up: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Drizzle over the salad.
  7. Final Touches: If using Italian rolls, chop them up and add them at the top for a crunchy finish. Mix everything one last time.
