Zucchini Bruschetta Board

A colorful and vibrant Zucchini Bruschetta Board, perfect for gatherings or a midweek dinner, blending fresh zucchini, ripe tomatoes, and aromatic basil.

Ingredients

  • 2 medium Zucchini, sliced into ½ inch rounds
  • 2 cups Juicy, ripe Tomatoes (heirloom or cherry)
  • 1 cup Fresh Basil, chiffonade
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Balsamic Glaze
  • Salt & Pepper, to taste

Instructions

  1. Prepare your zucchini: Wash and slice them into ½ inch rounds.
  2. Preheat the grill or skillet over medium heat.
  3. Grill the zucchini for about 3-4 minutes per side until tender.
  4. Prep the tomatoes: Dice and mix with olive oil, salt, and pepper.
  5. Chop the basil and add it to the tomato mixture.
  6. Assemble the board with grilled zucchini and tomato-basil mixture on top.
  7. Drizzle with balsamic glaze and garnish with extra basil.

Notes

For variations, try adding olives and artichokes, or use different herbs for added flavor.
