Tomato Rice

A delicious, comforting one-pot Tomato Rice that combines the sweetness of tomatoes with basmati rice and spices, perfect for creating warm memories around the dinner table.

  • 1 cup basmati rice
  • 2 cups water
  • 2 medium tomatoes, chopped
  • 1 onion, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 tablespoons oil or ghee
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Let it soak for about 15-20 minutes.
  2. Heat the oil or ghee in a medium-sized pot over medium heat.
  3. Add the mustard seeds first and let them start popping. After a few seconds, toss in the cumin seeds.
  4. Add the finely chopped onion and sauté until they turn translucent and slightly golden, about 5-7 minutes.
  5. Stir in the ginger-garlic paste and slit green chilies; cook for another 1-2 minutes.
  6. Add the chopped tomatoes and a pinch of salt, and cook until soft, about 5-7 minutes.
  7. Incorporate the soaked basmati rice and pour in the 2 cups of water, giving it a gentle stir.
  8. Bring the mixture to a boil, then reduce the heat to low, cover and simmer for about 15 minutes.
  9. Turn off the heat and let it sit, covered, for another 5 minutes.
  10. Fluff the rice with a fork and garnish with fresh coriander leaves.

Notes

Serve with yogurt or cucumber salad for a balanced meal. For a twist, try adding vegetables or proteins as desired.
