A colorful Vegan Salad that is a feast for the eyes and an explosion of flavors celebrating healthy eating.

Ingredients

  • Mixed Greens (Spinach, Kale, Arugula)
  • Cherry Tomatoes
  • Cucumber
  • Red Onion
  • Bell Pepper
  • Chickpeas
  • Avocado
  • Olive Oil
  • Lemon Juice
  • Salt and Pepper

Instructions

  1. Prepare your greens by rinsing them thoroughly and patting them dry.
  2. Chop your vegetables: dice cucumbers, halve cherry tomatoes, slice red onion, and bell pepper.
  3. Add chickpeas to the mix after rinsing and draining them.
  4. Slice the avocado and prevent browning by adding lemon juice.
  5. Combine all ingredients in a salad bowl and toss gently.
  6. Dress the salad with olive oil and lemon juice, then season with salt and pepper.
  7. Final toss and let sit for a few minutes before serving for the flavors to meld.
