Healthy Banana Oatmeal Bars

Delicious and nutritious banana oatmeal bars perfect for a quick snack or breakfast.

  • 3 very ripe bananas (about 1½ cups mashed)
  • 2 cups old-fashioned rolled oats
  • ⅓ cup honey or pure maple syrup
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prep an 8×8-inch square baking dish by lining it with parchment paper or greasing it with coconut oil.
  3. Mash the ripe bananas in a large mixing bowl until smooth.
  4. Mix in the eggs, honey (or maple syrup), and vanilla extract until well combined.
  5. Combine the rolled oats and baking powder in a separate bowl.
  6. Combine the dry ingredients with the wet mixture until just combined.
  7. Transfer the mixture to the prepared baking dish and spread it evenly.
  8. Bake for 25 to 30 minutes until golden brown and a toothpick comes out clean.
  9. Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For a vegan option, substitute the eggs with ¼ cup of unsweetened applesauce. You can add nuts or chocolate chips for variations.
