Zucchini Alfredo Lasagna Roll-Ups

Delicious and comforting Zucchini Alfredo Lasagna Roll-Ups, combining classic flavors with a fresh veggie twist.

Ingredients

  • Lasagna noodles
  • Zucchini, thinly sliced
  • Alfredo sauce
  • Shredded mozzarella cheese
  • Garlic, minced
  • Dried herbs (oregano, thyme)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions until al dente, then drain and rinse.
  3. Prepare zucchini by slicing it lengthwise into 1/8-inch thick pieces.
  4. Make the Alfredo sauce by melting butter, adding garlic, then cream and Parmesan cheese.
  5. Assemble the roll-ups with noodles, sauce, zucchini, and cheese, then roll and place seam-side down in a baking dish.
  6. Repeat until all ingredients are used.
  7. Top with remaining Alfredo sauce and mozzarella cheese.
  8. Bake covered for 25 minutes, then uncover and bake for an additional 10-15 minutes.
  9. Cool for a few minutes before serving.

Notes

Feel free to prep these roll-ups in advance and bake later. They can also be frozen for up to 3 months.
