Zucchini Avocado Ranch Wraps

A fresh twist on wraps featuring zucchini, avocado, and ranch dressing, perfect for a light lunch or dinner.

Ingredients

  • 2 small Zucchini
  • 1 ripe Avocado
  • 1/4 cup Ranch Dressing (store-bought or homemade)
  • 4 Tortillas (flour or corn)

Instructions

  1. Prep the Zucchini by washing and trimming it. Cut it into thin slices or ribbons.
  2. Slice the Avocado in half, remove the pit, and mash it in a bowl with salt and lime juice.
  3. Make your Ranch Dressing if homemade by whisking together mayonnaise, buttermilk, and herbs until smooth.
  4. Assemble the Wrap by spreading mashed avocado on a tortilla, layering on zucchini slices, and adding a handful of spinach if desired.
  5. Add Ranch Dressing over the top and roll the wrap tightly, tucking in the ends.
  6. Slice the wrap in half and serve immediately or save for later.

Notes

For a colorful presentation, serve with carrot sticks or fruit salad. Feel free to customize with proteins or spices.
