Zucchini Cheesecake Swirl Bars

A delightful twist on classic cheesecake, these Zucchini Cheesecake Swirl Bars combine creamy texture with fresh zucchini for a unique dessert experience.

  • 1 cup grated Zucchini
  • 8 oz Cream Cheese, softened
  • 1 cup Granulated Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1 ½ cups All-Purpose Flour
  • 1 tsp Baking Powder
  • ½ tsp Salt
  • ½ cup Butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking dish with parchment paper.
  3. Grate the zucchini and squeeze out excess moisture.
  4. Make the cheesecake mixture by beating the cream cheese, half the sugar, and one egg until smooth, then add vanilla.
  5. Prepare the batter in another bowl with remaining eggs, sugar, and melted butter, then mix in flour, baking powder, and salt.
  6. Fold in the grated zucchini.
  7. Spread the zucchini batter in the prepared pan, then dollop cheesecake mixture and swirl.
  8. Bake for 25-30 minutes until edges are golden and toothpick comes out with a few moist crumbs.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes
