  • 2 medium Zucchini (roughly 2 cups shredded)
  • 2 cups Oats (rolled or quick oats)
  • 1 teaspoon Cinnamon
  • 1 cup Sugar (granulated)
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 2 large Eggs

Instructions

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  2. Prepare the Zucchini: Grate the zucchinis and squeeze out excess moisture.
  3. Mix Dry Ingredients: In a large bowl, combine oats, cinnamon, sugar, salt, and baking powder.
  4. Whisk the Wet Ingredients: In a separate bowl, beat the eggs and then mix in the squeezed zucchini.
  5. Combine the Mixtures: Fold the wet ingredients into the dry mixture gently.
  6. Bake: Pour your batter into a greased 9×13 inch baking dish and bake for 25-30 minutes.
  7. Cool and Slice: Let the bars cool for at least 10 minutes before slicing.

Notes
