Zucchini Rollatini

A cozy and heartwarming dish featuring zucchini rolled with a creamy cheese filling and topped with marinara sauce.

  • 2 large zucchinis
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin slices (about 1/4 inch thick).
  3. Prepare the cheese mixture by combining ricotta, 1/2 cup mozzarella, Parmesan, egg, garlic powder, and Italian seasoning. Season with salt and pepper.
  4. Lay out the zucchini slices in a single layer.
  5. Fill each slice with 1 to 2 tablespoons of the cheese mixture and roll it up.
  6. Place rolled zucchinis seam-side down in a baking dish with 1 cup of marinara sauce on the bottom.
  7. Top with the remaining marinara sauce and sprinkle with remaining mozzarella cheese.
  8. Bake covered with foil for 25 minutes, then remove foil and bake for an additional 15 minutes.
  9. Garnish with fresh basil before serving.

Notes

This dish can be prepared ahead of time. Enjoy with a simple salad or crusty bread.
